International Conference ICFD2026 at Gdańsk University of Technology

From May 19–21, 2026, Gdańsk University of Technology hosted the 9th edition of the international conference dedicated to food digestion, nutrient bioaccessibility and bioavailability, as well as the impact of digestive processes on human health.

The event was organized under the auspices of the international INFOGEST network, bringing together scientists and industry representatives from around the world involved in research on food digestion and human nutrition. This year’s edition gathered participants representing numerous universities, research centers, and scientific institutions from Europe and other parts of the world.

The Chair of the Organizing Committee was Prof. Adam Macierzanka from the Faculty of Chemistry at Gdańsk University of Technology, while the Co-Chair was Dr. Eng. Ilona Kłosowska-Chomiczewska, also affiliated with the Faculty of Chemistry. The entire organizing committee consisted of the faculty’s staff members and doctoral students.

The conference program included plenary lectures, oral sessions, poster sessions, and networking meetings. The thematic scope of the event focused on:

  • food digestion processes,
  • bioaccessibility and bioavailability of nutrients and bioactive compounds,
  • the role of the gut microbiota,
  • digestion and absorption models,
  • imaging techniques and physicochemical methods used in digestion research,
  • the impact of food structure on metabolic processes and human health.

During the conference, research results were presented on topics including plant-based foods, alternative protein sources, the bioavailability of micro- and macronutrients, food allergenicity, the influence of technological processes on digestion, and modern research models used in food and nutrition sciences.

The conference provided an opportunity for the exchange of experiences between academia and industry representatives, as well as for continuing discussions on future directions in research related to food, health, and modern nutritional technologies.

We would like to sincerely thank the organizers for preparing the event at such a high scientific and organizational level, and all participants for their presence, scientific presentations, and active engagement in discussions. Organizing a conference of this scale represents an important step in strengthening the international recognition of Gdańsk University of Technology and the Faculty of Chemistry in the fields of food science and human health.
